What is induction cooking?

An induction cooktop works by holding induction coils that generate magnetic fields to induct a warming reaction in steel and iron-based pots or pans. Only the cookware heats the food, not the cooktop.

Induction cooking is:

  • Energy efficient. Induction cooktops use about 90% of the energy produced compared with about 50% by other cooking methods.
  • Safe. Only the pot heats, not the cooktop, providing a safer cooking environment.
  • Convenient. It doesn’t heat up the kitchen or the cook!
  • Fast. Induction cooking is about 50% faster than gas or electric.
  • Easy-clean. Spills don’t bake onto the cooking surface, making clean-up fast and simple.
  • Eco-friendly. Induction cooktops can detect the size of what sits on the burner and adjusts energy as required; no energy is wasted because of smaller-size pots.

What kind of cookware is required?

Induction-ready cookware must have a layer of magnetized metal that allows electromagnetic energy to be converted into heat. Induction-ready cookware is readily available from major manufacturers. A do-it-yourself approach to test induction safety is to place a magnet on the base of the cooking pot; it must cling tightly to be induction-ready.
